Pepper Bacon BLT

  • 8 Slices of Pepper Bacon

  • 4 Slices of Summer Tomatoes sliced 1/4” Thick

  • Salt & Pepper to Taste

  • 4 tbsp of Mayonnaise

  • 4 Slices of Bread

  • 2 Pieces of Lettuce


Preheat Oven to 415 degrees. Place the bacon strips on a single layer on a rack on a foil-lined sheet tray. Bake the bacon until just crisp, about 18-20 minutes. Meanwhile, sprinkle the tomato slices with pepper and salt. Lightly toast the bread. When the bacon is ready, transfer it to the paper towel-lined plate to drain. To assemble, spread a thin layer of mayo on the side of the toasted bread, then layer the tomatoes, bacon, and lettuce and top with the remaining slices of bread.
